Tom Spolski, a dedicated maple producer from Cameron County, Pennsylvania, has been perfecting his craft for over 14 seasons as the one-man force behind Spolski Maple. Tapping approximately 460 soft maple trees across three locations—including Hunts Run—Tom uses a network of tubing to collect sap, which is then processed through a reverse osmosis system to remove up to 80% of its water before being carefully boiled, filtered, and bottled. His passion for maple syrup extends beyond the traditional, offering a growing line of infused flavors such as cinnamon, vanilla bean, coffee, bourbon barrel, blueberry, and even a bold habanero variety currently in development. Tom also crafts a popular maple mustard, beloved by locals for its versatility. A regular vendor at the Cameron County Farmers Market in Emporium, Tom is known for his consistent presence, high-quality products, and deep-rooted commitment to the local community and to the art of maple sugaring.
