Tucked into the scenic hills of Potter County, just outside the small town of Ulysses, Pennsylvania, Heath Run Maple Products is a hidden gem of the northern hardwood forest—a small, family-run maple syrup operation that’s as rich in tradition as the syrup they bottle. Owned and operated by Nicholas and Susan Freeman, Heath Run Maple has quietly grown into a respected name in the local maple community, thanks to their passion, hard work, and deep connection to the land. Each spring, they tap around 1,100 maple trees on their property, collecting sap the old-fashioned way and boiling it down over a wood-fired evaporator. It’s a process that demands long hours, careful attention, and respect for the trees, but for the Freemans, it’s also a labor of love—a way of life that ties them to the rhythm of the seasons and generations of syrup-makers before them.

What makes Heath Run Maple truly special is the heart behind every bottle. Nicholas and Susan don’t just produce syrup—they pour their dedication into every batch, focusing on quality over quantity and staying true to small-batch, hands-on production methods. Their products are available directly from their homestead on Horseshoe Road, where visitors are always welcome to stop by, learn about the process, and take home some of the region’s purest maple syrup. The Freemans also partner with local businesses to help spread the taste of their maple throughout the area, and they actively participate in the community, forming bonds with neighbors and fellow producers alike.
